The vinegar production process usually looks like this:

Raw ingredients > Saccharification and alcohol fermentation > Acetic acid fermentation (in-line BRIX measurement) > Time > Filtration > Bottling (in-line BRIX measurement) > Shipping

In-line BRIX measurement of acetic acid fermentation

Management of the fermentation processThe progress and condition of the acetic acid fermentation can be monitored.

About vinegar

The Japanese Agricultural Standard (JAS), "Consumable Vinegar Japan Agricultural Standards", defines vinegar to be made by brewing grains or fruits and then adding acetobacter to facilitate fermentation.

Materials used for the inline BRIX or refractometers in vinegar production

Vinegar can be very acidic and corrode metals. However, Inventech also supplies inline refractometers or BRIX meters made of more durable material, such as titanium.
