Dextrose for color in potato products
Manufacturers of fries and other potato products add dextrose to potato products for color. The chips are passed through a dextrose solution. However, how much dextrose a solution contains is often unclear to the manufacturer. Brix cannot be used to measure this, because the varying amount of starch in the measurement gives a distorted picture. NIR is best used to measure the amount of dextrose in the solution.
